Pecans Cook!
Pecans are high in antioxidants-Pecans are noted, in the June edition of the Journal of Agriculture and Food Chemistry, as having more antioxidant capacity than any other nut! Pecans are huge for nutrition- Pecans are jam packed with nutrition, with Vitamins A, and E, Several B Vitamins, folic acid, calcium, magnesium, phosphorus, potassium, and zinc! A single serving of pecans, or about an ounce can provide around 10 percent of the recommended daily value for zinc and fiber. Pecans are a Particularly good source for unsaturated fats, including the monounsaturated fat known as oleic acid. *Recipes*
Roasted Pecans
1 tablespoon butter
2 tablespoons sugar
1 tablespoon orange juice
1/4 teaspoon ground cinnamon
1/8 teaspoon ground red pepper
1 cup pecan halves
Melt butter in a large skillet over medium heat; stir in sugar, orange juice and spices. Add pecans to skillet stirring to coat.
Spread pecans on a lightly sprayed baking sheet. Bake at 325 for 15 minutes, stir every 5 minutes. Cool completely. If any left overs- store in airtight container.

Pecan Pie
4 eggs
1 cup sugar
1/2 cup light Karo syrup
1/2 cup dark Karo syrup
3 tablespoons margarine
dash of salt
1 tablespoon vanilla
1 cup pecans chopped
1 unbaked piecrust
Beat eggs and next 6 ingredients on medium speed with electric mixer until smoot. Stir in chopped pecans; pour into crust.
Bake at 450 for 10 minutes. Reduce heat to 350 and bake for 35 to 40 minutes until pie is set.

1/2 cup dark Karo syrup
3 tablespoons margarine
dash of salt
1 tablespoon vanilla
1 cup pecans chopped
1 unbaked piecrust
Beat eggs and next 6 ingredients on medium speed with electric mixer until smoot. Stir in chopped pecans; pour into crust.
Bake at 450 for 10 minutes. Reduce heat to 350 and bake for 35 to 40 minutes until pie is set.
Riverbilly Dip
2 blocks cream cheese- softened
1/2 jar bread & butter jalapeno peppers
1 cup chopped pecans
Mix all ingredients together - serve with chips or crackers.

Boneless chicken breast flatten and add Riverbilly dip into the middle of chicken breast wrap with bacon, season withdry rub, secure with tooth pick and grill until cooked all the way through.
Dry Rub
½ cup Paprika
¼ cup Garlic
¼ cup Salt
¼ cup black pepper
Mix all of the above and then mix with equal portion of brown sugar. Add rub to pork. Omit brown sugar for beef.
Riverbilly Breakfast
1 pound of breakfast sausage cooked and drained, Riverbilly dip stirred into sausage, spread onto croissant rolls and baked.
Pecan Sandies
1 cup of butter 4 cups all purpose flour
1 cup of vegetable oil 1 teaspoon baking soda
1/2 cup sugar 1 teaspoon cream of tartar
1/2 cup brown sugar 1 teaspoon salt
1 cup powder sugar sifted 2 cups chopped pecans
2 eggs
2 teaspoons of vanilla extract
Preheat oven to 375 degrees.
In large bowl cream together the butter, oil, sugars, until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, cream of tartar and salt; stir into the creamed mixture. Mix in the pecans. Roll dough into 1 inch balls. Place the cookies 2 inches apart onto ungreased cookie sheet.
Bake for 10-12 minutes in the preheated oved or until the edges are golden, Remove from cookie sheets to cool on wire racks.
